Ingredients
- 2 cups frozen shelled edamame thawed and drained
- 1 whole red or yellow bell pepper diced
- 3/4 cup corn frozen
- 3 tbsp fresh cilantro chopped
- 2 tbsp red wine vinegar
- 1 tsp soy sauce low sodium, NO SODIUM BENZOATE
- 1 tsp chili powder
- 2 tsp lemon juice fresh
- 1/8 tsp salt to taste
- 1/8 tsp black pepper to taste
Instructions
- In a large bowl, mix edamame, bell pepper, corn, and cilantro.
- In a small bowl, mix the vinegar, soy sauce, chili powder, and lemon juice. Drizzle over the edamame mixture. Toss well. Salt and pepper to taste.
- Refrigerate for 1 hour, toss again and then serve.
