Ingredients
  

  • 2 cups frozen shelled edamame thawed and drained
  • 1 red or yellow bell pepper diced
  • 3/4 cup corn
  • 3 tbsp fresh cilantro chopped
  • 3 tbsp olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 1 tsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1 tsp chili powder
  • 2 tsp lemon juice fresh
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste

Instructions
 

  • In a large bowl, mix edamame, bell pepper, corn, and cilantro.
  • In a small bowl, mix the olive oil, vinegar, soy sauce, chili powder, and lemon juice. Drizzle over the edamame mixture. Toss well. Salt and pepper to taste.
  • Refrigerate for 1 hour, toss again and then serve.
