Cilantro-Lime Brown Rice

  • 4 cups water
  • 2 cups brown rice long-grained
  • 2 tbsp lime juice fresh squeezed, no sugar added or preservatives
  • 1 1/2 tsp garlic minced
  • 1 1/2 tsp olive oil extra virgin
  • 1 tsp salt
  • 1/2 cups cilantro chopped


  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, about 30 to 45 minutes.
  • Transfer brown rice to a large bowl and let cool for about 6 minutes.
  • Whisk the lime juice, garlic, olive oil, and salt together in a bowl; stir into rice. Fold the cilantro into rice mixture. Enjoy!
