  • 4 cups water
  • 2 cups brown rice
  • 2 tbsp lime juice fresh squeezed, no sugar added or preservatives
  • 1 1/2 tsp garlic minced
  • 1 tsp salt
  • 1/2 cups cilantro chopped


  • In a small sauce pan, bring water to a boil and add the brown rice. Cover, reduce heat to low and let simmer until the rice is tender and liquid has been absorbed, about 30 to 45 minutes.
  • Transfer brown rice to a large bowl and let cool for about 6 minutes.
  • In a small bowl, whisk the lime juice, garlic, and salt together. Drizzle over the rice.
  • Fold the cilantro into the rice mixture and serve.
