  • water
  • 1 lb green beans
  • 1 cup shallot chopped
  • 1 clove garlic minced
  • 1 tbsp olive oil extra virgin
  • 1 yellow or orange bell pepper sliced very thin (julienned)
  • 2 cups collard greens chopped and packed
  • 3 tbsp orange juice fresh squeezed, no added sugar or preservatives
  • zest of 1 orange
  • 1 tbsp Balsamic vinegar
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste


  • In a steamer basket, add water to the bottom of the steam basket. Bring the water to a boil and add in the green beans. Steam for about 3 minutes until tender and bright green.
  • In a large skillet over medium heat, saute the shallots, garlic, and peppers for about 5 minutes until tender and golden.
  • Reduce heat and add in the green beans, collard greens, juice, zest and vinegar. Cook for 5 minutes. Salt and pepper to taste.
