Ingredients
- 1 cup quinoa
- 2 cups apple juice no added sugar, no preservatives
- 1 cup water
- 1/2 cup onion diced
- 2 cups celery diced
- 2 tbsp Earth Balance Butter
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/2 cup dried cranberries no added sugar
- 1/2 cup dried apricots chopped
- 1 tsp parsley
- 1/4 tsp salt
Instructions
- In a large stock pot with a lid, add the quinoa, apple juice, and water. Bring to a slow simmer, cover, and cook for 15 minutes or until the quinoa is done.
- While the quinoa is cooking, in a large skillet, sauté the onion and celery in the butter until veggies are soft. Stir often.
- Add the onion mixture into the quinoa and add the remaining ingredients. Gently toss and heat through.
