Cranberry and Apricot Quinoa

  • 1 cup quinoa
  • 2 cups apple juice
  • 1 cup water
  • 1/2 cup onion diced
  • 2 cups celery diced
  • 2 tbsp Earth Balance Butter
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots chopped
  • 1 tsp parsley
  • 1/4 tsp salt


  • In a large stock pot with a lid, add the quinoa, apple juice, and water. Bring to a slow simmer, cover, and cook for 15 minutes or until the quinoa is done.
  • While the quinoa is cooking, in a large skillet, saut√© the onion and celery in the butter until veggies are soft. Stir often.
  • Add the onion mixture into the quinoa and add the remaining ingredients. Gently toss and heat through.
