Ingredients
- 1 tbsp olive oil extra virgin, divided
- 1/2 cup onion chopped fine
- 1 cup grits old fashioned
- 4 1/2 cups almond milk unflavored, unsweetened
- 1 tsp salt divided
- 1/4 tsp black pepper fresh cracked
- 1 tbsp chives fresh, minced
Instructions
- Heat 1/2 tbsp of the olive oil in a medium sized saucepan over medium heat the sauté the onions until browned; about 7 minutes.
- Stir in the grits and cook, stirring often, for about 4 minutes.
- Whisk in the almond milk and 1/2 tsp of salt then increase the heat to medium high and bring to a boil. Reduce heat to low, cover, and simmer, whisking often, until thick and creamy, about 15 minutes.
- Remove from the heat, stir in remaining olive oil then season with remaining salt and pepper. Sprinkle with chives and serve. Enjoy!
