Ingredients
  

  • 3 tbsp olive oil extra virgin, divided
  • 1/2 cup onion chopped fine
  • 1 cup grits old fashioned
  • 4 1/2 cups almond milk unflavored, unsweetened
  • 1 tsp salt divided
  • 1/4 tsp black pepper fresh cracked
  • 1 tbsp chives fresh, minced

Instructions
 

  • Heat 1 tbsp of the olive oil in a medium sized saucepan over medium heat the sauté the onions until browned; about 7 minutes.
  • Stir in the grits and cook, stirring often, for about 4 minutes.
  • Whisk in the almond milk and 1/2 tsp of salt then increase the heat to medium high and bring to a boil. Reduce heat to low, cover, and simmer, whisking often, until thick and creamy, about 15 minutes.
  • Remove from the heat, stir in remaining olive oil then season with remaining salt and pepper. Sprinkle with chives and serve. Enjoy!
