Ingredients
  

  • 2 cups frozen shelled edamame thawed and drained
  • 2 cups barley cooked
  • 1/3 cups roasted red peppers chopped
  • 2/3 cup frozen green peas thawed and drained
  • 2/3 cup frozen corn thawed and drained
  • 1 1/2 tbsp Dijon mustard
  • 2 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 3/4 tsp garlic powder
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • In a large bowl, add the edamame, cooked barley, roasted peppers, peas, and corn. Set aside.
  • In a small bowl, mix the mustard, lemon juice, and garlic powder. Whisk well, then drizzle over the edamame and barley mixture. Gently toss.
  • Season with salt and pepper and garnish with cilantro and avocado.
