Garlic Chive "Cream Cheese"

  • Food Processor


  • 1 cup cashews raw, unsalted
  • 4 tbsp lemon juice fresh squeezed, no sugar added or preservatives
  • 1 clove garlic minced
  • 1 tbsp chives chopped
  • 1/4 tsp black pepper fresh cracked
  • 1/4 tsp salt


  • Place the cashews into a small bowl and cover completely with water. Let soak for at least 2 hours. Drain the nuts, reserving the liquid.
  • Transfer to a food processor along with 1 tbsp of reserved liquid, lemon juice, garlic, chives, and salt; pulse until really smooth. Enjoy!


Spread on crackers, or as a dip for crudités.
