Ingredients
  

  • 10 baby potato
  • 1 avocado large
  • 1 clove garlic minced
  • 2 tbsp red onion finely diced
  • 1/2 cup Roma tomato deseeded, finely diced
  • 1 tbsp cilantro fresh, chopped
  • 1 1/2 tbsp lime juice fresh squeezed
  • 1 tsp salt divided
  • 1/2 tsp black pepper fresh cracked
  • 1 1/4 tsp olive oil extra virgin

Instructions
 

  • Preheat the oven to 420 degrees.
  • Slice the potatoes in half and place in a bowl; coat in the olive oil. Lay pieces sliced side down on a lined baking sheet and bake for 40 minutes.
  • Use a small spoon to carefully hollow out the potato skins, leaving about a 1/4 of the skin.
  • Prepare the guacamole, in a medium bowl, mash the avocado and mix it with the garlic, onion, tomato, cilantro, lime juice, salt and pepper.
  • Fill the hollowed potato skins with guacamole and serve immediately. Enjoy!

Notes
