Ingredients
- 10 baby potato
- 1 avocado large
- 1 clove garlic minced
- 2 tbsp red onion finely diced
- 1/2 cup Roma tomato deseeded, finely diced
- 1 tbsp cilantro fresh, chopped
- 1 1/2 tbsp lime juice fresh squeezed
- 1 tsp salt divided
- 1/2 tsp black pepper fresh cracked
- 1 1/4 tsp olive oil extra virgin
Instructions
- Preheat the oven to 420 degrees.
- Slice the potatoes in half and place in a bowl; coat in the olive oil. Lay pieces sliced side down on a lined baking sheet and bake for 40 minutes.
- Use a small spoon to carefully hollow out the potato skins, leaving about a 1/4 of the skin.
- Prepare the guacamole, in a medium bowl, mash the avocado and mix it with the garlic, onion, tomato, cilantro, lime juice, salt and pepper.
- Fill the hollowed potato skins with guacamole and serve immediately. Enjoy!
