Hazelnut Banana Bread Muffins

  • 2 banana peeled, ripe
  • 1 tbsp maple syrup
  • 1/3 cup pecans finely diced
  • 1/2 cup plant-based milk
  • 1 cup flour no bleached flour
  • 1/4 tsp apple cider vinegar
  • 1/4 cup hazelnut meal
  • 1 tsp baking soda
  • 1 tbsp Earth Balance butter melted
  • 1/4 tsp baking powder


  • Preheat the oven to 350 degrees.
  • Mash the banana's in a large bowl along with the maple syrup, milk, butter, and apple cider vinegar. Whisk together.
  • Continue adding the flour, hazelnut meal, pecans, baking soda, and baking powder. Batter should be thick.
  • Scoop the batter into muffin pans lined with paper muffin cups. Batter should make 8 muffins.
  • Bake for 22 to 25 minutes until golden on top. Use a toothpick to check to make sure they are done. Let cool for 5 minutes then dig in. Enjoy!
