Ingredients
  

  • 4 potatoes thinly sliced
  • 1 whole yellow or white onion chopped
  • 1 tbsp Earth Balance Butter
  • 2 tbsp flour no bleached flour
  • 2 cups unsweetened soy milk NO SODIUM BENZOATE
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp nutritional yeast
  • 1 tsp lemon juice fresh
  • 1/2 tsp salt
  • 3/4 tsp paprika
  • 1/2 tsp black pepper
  • 3/4 cup bread crumbs optional

Instructions
 

  • Preheat the oven to 375 degrees.
  • Place 1/2 of the sliced potatoes in a casserole or baking dish, spreading evenly. Layer 1/2 of the onions on top of the potatoes, spreading evenly. Set aside.
  • In a medium saucepan over low heat, melt the butter. Stir in flour, mixing to make a thick paste. Add soy milk, onion powder, garlic powder, nutritional yeast, lemon juice, and salt, stirring constantly. Cook until sauce has thickened, about 2-3 minutes.
  • Pour 1/2 of the sauce over the potatoes and onions. Layer in the remaining potatoes, spreading evenly. Layer in the remaining onions, spreading them evenly as well. Pour remaining sauce over the potatoes and onions.
  • Sprinkle the paprika and black pepper over mixture and top with bread crumbs.
  • Cover with foil and bake for 45 minutes. Remove foil and bake an additional 10 minutes to brown the top.
