Refreshing Quinoa & Butter Bean Salad

  • Small mixing bowl
  • Large mixing bowl



  • 1/2 cup bell pepper diced
  • 1/4 cup red onion diced
  • 1/2 cup quinoa cooked by package instructions
  • 1 can butter beans drained and rinsed


  • 2 tbsp water
  • 1 tsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 hass avocado mashed
  • 1 clove garlic
  • 1/2 tsp salt


  • Mix all of the ingredients for the dressing into small mixing bowl until fully combined and smooth.
  • Place all of the salad ingredients into large mixing bowl and toss.
  • Combine both dressing and salad together mix with hands until fully coated.
  • Best served cold.
