Spicy Creamed Corn

  • 1/2 cup cashews soaked overnight
  • 1/2 cup bell pepper chopped
  • 1 tbsp green chilies chopped
  • 1 tbsp jalapeno deribbed, deseeded
  • 1 tsp cumin dried
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 2 cups corn kernels fresh or frozen
  • 1 tsp oregano dried
  • 1/4 tsp liquid smoke
  • 1/4 tsp salt


  • Place the soaked cashews in a food processor and blend until smooth. Set to the side.
  • Heat a pan over medium heat and add the bell pepper, green chilies, jalapeno, cumin, smoked paprika, and chili powder. Cook until the bell pepper softens about 3 to 4 minutes.
  • Sir in the cashew mixture, corn, oregano, and liquid smoke and cook until the corn is tender. Salt to taste and serve.
