Spicy Japanese Cucumber Salad

Ingredients
  

  • 2 cucumbers sliced thinly
  • 1/2 tsp salt
  • 1/4 cup rice wine vinegar
  • 1 tbsp agave nectar
  • 1 tsp sesame oil
  • 1/2 onion sliced thinly
  • 1/4 tsp red pepper flakes

Instructions
 

  • On a shallow baking sheet, spread the cucumbers into a single layer and sprinkle with salt. Allow to rest for about 10 minutes.
  • Drain the excess moisture from the cucumbers. Set aside.
  • Mix together the vinegar, agave, oil, and red pepper flakes in a medium bowl. Whisk well.
  • Drizzle the vinegar mixture over the cucumbers. Add onions and gently toss.
  • Allow to salad to rest for 10-15 minutes to allow flavors to mingle.
