Sweet Potato and Sauerkraut Sandwiches

  • 23 oz sweet potato
  • 3 tbsp olive oil extra virgin, divided
  • 3/4 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper fresh cracked
  • 8 slices bread no bleached flour
  • 3 cup leafy greens
  • 1 cup sauerkraut
  • 8 slices tomato


  • Preheat the oven to 450 degrees.
  • Peel and slice the sweet potato from the top to bottom into slabs about 1/2 inch thick. Place on a baking sheet lined with parchment paper.
  • In a small bowl, mix together the oil, chili powder, smoked paprika, and garlic powder. Brush this mixture over each side of the sweet potato slabs and sprinkle with salt and pepper.
  • Place in the oven and roast, flipping once, until tender, about 17 to 20 minutes. Remove from the oven and let cool for a few minutes.
  • Make the dressing with our Thousand Island Dressing recipe.
  • Toast the bread slices in a toaster on your preferred heat setting.
  • Slather both inner sides of each pair of bread slices with the dressing and top with leafy greens, sweet potato, sauerkraut, and tomatoes. Enjoy!
