Three Bean Salad

  • Microwave



  • 10 oz green beans fresh
  • 1 1/2 cups chickpeas canned, drained, rinsed
  • 1 1/2 cups kidney beans canned, drained, rinsed
  • 1/2 cups celery chopped
  • 1/4 cup parsley fresh, chopped


  • 1/3 cup apple cider vinegar
  • 3 tbsp olive oil extra virgin
  • 2 tbsp agave nectar
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground


  • Trim the ends off the green beans, then slice into thirds. Place in a microwave safe bowl and add enough water to cover the bottom of the bowl. Cover the bowl with a microwave safe lid and heat on high for about 5 minutes until beans are tender.
  • Prepare the dressing, in a small bowl by combining the vinegar, oil, agave, salt and pepper.
  • In a large bowl, combine the green beans, chickpeas, kidney beans, celery, and parsley. Add the dressing and toss well. Serve and enjoy!
