  • 2 large zucchinis fry cut
  • 1 tbsp olive oil extra virgin
  • 2 tsp flour brown rice
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1/4 tsp Kosher salt
  • 1/4 tsp black pepper fresh cracked


  • Preheat the oven to 350 degrees while you line a baking sheet with parchment paper.
  • Toss the zucchini and olive oil together in a bowl.
  • Mix the flour, garam masala, and cumin together; then mix with the zucchini.
  • Spread the zucchini in a singe layer on the lined baking sheet, then lightly sprinkle with salt and pepper. Bake for 13 to 15 minutes, until firm yet tender. Enjoy!
