Zucchini Pomodoro Sauce with Fresh Basil

  • 2 1/2 cups zucchini sliced
  • 4 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 4 large tomatoes diced
  • 1/3 cup fresh basil chopped
  • 2 cups Tinkyada spaghetti prepared per package instructions
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste
  • 1/8 cup plant-based Parmesan cheese optional


  • In a large saucepan over low heat, heat zucchini and garlic in the olive oil until zucchini is lightly softened. Add in the tomatoes and cook for an additional 5 minutes.
  • Stir in basil and pasta. Salt and pepper to taste and sprinkle with the Parmesan cheese.
