Ingredients
  

  • 30 oz chickpeas canned, drained, rinsed
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice fresh squeezed, no sugar added or preservatives
  • 1 tsp salt
  • 1 tsp black pepper fresh cracked
  • 1/4 tsp cayenne pepper ground
  • 1 cup arugula chopped coarse
  • 1 bulb fennel stalk discarded, cored, cut into 1/4' pieces

Instructions
 

  • Microwave the chickpeas in medium sized bowl for about 2 minutes. Stir in the olive oil, lemon juice, salt, pepper, and cayenne then allow to sit for about 30 minutes.
  • Add the arugula and fennel then toss to combine. Serve and Enjoy!
