Ingredients
  

  • 4 cups iceberg lettuce chopped
  • 1/2 cup cucumber diced
  • 1/4 cup red onion diced
  • 1 cup black beans rinsed
  • 10 whole cherry tomatoes halved

Instructions
 

  • Place 2 cups chopped lettuce on each of 2 plates
  • Top with 1/4 cup diced cucumber on each plate
  • Top with 1/8 cup of diced red onion on each plate
  • Add 1/2 cup of black beans to each plate
  • Add 1/2 of the cherry tomatoes to the top of each plate

Notes

You can 2 TBSP Avocado Cilantro Dressing to each plate. Making this a great-tasting side salad.
