Black Bean Side Salad
Add Avocado Cilantro Dressing to make this a tasty side salad.
- 4 cups iceberg lettuce chopped
- 1/2 cup cucumber diced
- 1/4 cup red onion diced
- 1 cup black beans rinsed
- 10 whole cherry tomatoes halved
- Place 2 cups chopped lettuce on each of 2 plates
- Top with 1/4 cup diced cucumber on each plate
- Top with 1/8 cup of diced red onion on each plate
- Add 1/2 cup of black beans to each plate
- Add 1/2 of the cherry tomatoes to the top of each plate
You can 2 TBSP Avocado Cilantro Dressing to each plate. Making this a great-tasting side salad.
