Ingredients
  

Sprouts

  • 2 tbsp olive oil extra virgin
  • 2 1/2 cups Brussels sprouts sliced thin or shredded
  • 1/2 cup onion thinly sliced
  • 1 1/2 tsp cumin powder
  • 1 tsp chili powder
  • 3 cloves garlic minced
  • 1/4 tsp salt

Serving

  • 8-10 shells taco shells whole wheat, no bleached flour
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1/4 cup sour cream plant-based *see our Cashew Sour Cream recipe link
  • 1/4 cup salsa

Instructions
 

  • Heat the oil over medium heat in a large pan then saute the onions for about 5 minutes until translucent.
  • Add the Brussels sprouts, cumin, chili powder, and garlic and saute until tender, stirring constantly for about 12 to 13 minutes. Before serving, add salt to taste.
  • Assemble the tacos with the available toppings and enjoy!
