  • Blender or Food Processor


  • 1 cup cashews
  • 2 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 1/4 cup water
  • 2 tbsp water if needed


  • Soak the cashews for about 7 and a half hours; then drain.
  • Add cashews to a blender or food processor with the lemon juice and 1/4 cup water. Blend until smooth while scraping down the sides occasionally to make sure everything is incorporated and smooth.
  • Store in a airtight container for up to 7 days.


Serves well over all kinds of delicious dishes like veggie burritos, or as a base for dips and dressings.
