Cauliflower Couscous

  • 1 1/2 cups cauliflower florets
  • 1 3/4 cups carrots baby, coarsely chopped
  • 1 cup red bell pepper seeded, coarsely chopped
  • 1/2 cup red onion coarsely chopped
  • 1/2 cup parsley coarsely chopped
  • 1 tbsp olive oil extra virgin
  • 1 tbsp apple cider vinegar
  • 1 tsp date syrup
  • 1/4 tsp Kosher salt
  • 3 tbsp vegetable broth *see our Homemade Bouillon recipe link


  • Place the florets into a food processor and pulse until they begin to break down.
  • Add in the carrot, red pepper, onion, and parsley then pulse until the mixture looks like couscous.
  • Slowly pour in the olive oil, vinegar, date syrup, and salt then pulse until just mixed.
  • Transfer the mixture to a large saucepan with the vegetable stock and cook, covered, for about 12 minutes over medium heat. Serve immediately and enjoy.
