Ingredients
- 2 cups potatoes peeled, diced small
- 1 cup carrots peeled, cut into 1/4' rounds
- 1/2 cup olive oil extra virgin
- 1 1/2 tsp salt
- 1 tbsp lemon juice fresh squeezed, no sugar added or preservative
- 1/2 cup nutritional yeast
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Place the potatoes and carrots in a large pot covered in water. Bring to a boil over high heat, then reduce to a simmer and leave to cook for about 17-20 minutes, until vegetables are tender.
- Drain vegetables in a colander then transfer to a food processor.
- Add the remaining ingredients to the food processor, then blend on high until smooth. Enjoy!
Notes
Use over steamed vegetables or as a dipping sauce for a number of dishes. This sauce works great in Mac N Cheese recipes.
