A great plant-based cornmeal muffin, goes great with Lisa's protein Chili.

Ingredients
  

  • 1/2 tsp sea salt
  • 3 tbsp brown sugar
  • 2 tsp baking powder no aluminum
  • 1/4 cup olive oil extra virgin
  • 1 cup all-purpose flour non bleached
  • 1 tbsp flaxseed ground
  • 3 tbsp water
  • 2 tbsp maple syrup no additives
  • 1 cup oat milk unsweetened, original
  • 3/4 cup cornmeal

Instructions
 

  • Mix 1 tbsp ground flaxseed with 3 tbsp warm water in a small bowl, mix good and set aside.
  • Preheat oven to 400° F.
  • Lightly oil muffin pan.
  • Using a large mixing bowl stir in all ingredients.
  • Mix well, and place into muffin tins.
  • Bake for 20 minutes.
  • Allow to cool for a couple minutes.
