Creamy Broccoli Soup

  • 1 1/2 cups non-dairy milk unsweetened
  • 1 cup vegetable broth ***Click on our Homemade Vegetable Broth link
  • 1 tsp thyme dried
  • 1/2 tsp garlic powder
  • 1/2 tsp marjoram dried
  • 1/4 tsp salt
  • 1/8 tsp nutmeg dried
  • 1/8 tsp black pepper fresh cracked
  • 4 cups California mix frozen; mixed cauliflower, carrots, broccoli
  • 1 cup broccoli fresh
  • 6 cherry tomatoes halved


  • Combine the milk, broth, thyme, garlic powder, marjoram, salt, nutmeg and black pepper in a medium pan and mix well; then stir in the veggies except for the cherry tomatoes.
  • Bring the mixture to a almost boil; then turn down the heat to medium-low and simmer until the veggies are fork tender for about 20 minutes.
  • Ladle the soup into a blender and puree. Pour into individual bowls and top with the fresh halved cherry tomatoes. Enjoy!
