Creamy Carrot Soup

  • 3 carrots chopped
  • 1 sweet potato chopped
  • 2 yellow onion chopped
  • 3 1/2 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 3 cloves garlic minced
  • 2 tsp fresh ginger minced
  • 14 oz can coconut milk
  • 1/4 tsp salt to taste
  • 1/2 tsp cinnamon optional


  • In a large stock pot, combine carrots, sweet potatoes, onions, vegetable broth, garlic, and ginger. Simmer for 25 minutes or until carrots and potatoes are soft.
  • Allow carrot mixture to slightly cool, then transfer to a blender. Blend until a smooth consistency.
  • Pour the mixture back into the stock pot. Over simmering heat, whisk in coconut milk and salt. Once warmed, pour into bowls, sprinkle with cinnamon and serve.
