Curried Green Lentil Soup

  • 1 onion diced
  • 1 carrot sliced
  • 3 cloves whole
  • 3 tbsp Plant-based butter Earth Balance Butter
  • 1 tsp cumin
  • 2 tsp turmeric
  • 1 cup green lentils uncooked
  • 3 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 2 large tomatoes chopped
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
  • 1 tsp lemon juice fresh


  • In a large stock pot, sauté the onions, carrots, and cloves in the Earth Balance Butter on medium low heat until onions are soft. Stir in the cumin and turmeric and continue cooking for 1 minute.
  • Add lentils, broth, tomatoes, and salt. Bring mixture to a simmer and cover. Continue cooking for 40 minutes or until lentils are fully cooked.
  • Add the black pepper and lemon juice just before serving.
