Ingredients
- 2 cups water
- 1/8 tsp salt
- 1 cup edamame
- 1/4 cup vegetable broth
- 1 medium yellow onion minced
- 5 shitake mushroom caps cut into 1/4 inch strips
- 3 stalks green onions minced
- 1 tsp fresh ginger grated
- 8 oz firm tofu cut into thick slices
- 2 tbsp soy sauce NO SODIUM BENZOATE; low sodium
- 3 cups brown rice cooked
- 1 tbsp toasted sesame seeds
Instructions
- In a small sauce pan, bring the water and salt to a boil. Add in edamame and cook for 10 minutes or until tender. Drain and set aside.
- In a large skillet, pour enough broth to cover the bottom of the pan in a thin layer and heat to medium high. Add the onions and saute for about 5-7 minutes or until onions are translucent. It may be necessary to add additional broth to maintain a thin layer to prevent sticking.
- Add the shitake mushrooms and cook for about 5 minutes or until mushrooms are tender.
- Add in green onions, ginger, tofu, and soy sauce stirring while adding items. Cook 5 minutes.
- Stir in the edamame and cook for 5 more minutes
- Split the rice into 4 bowls and ladle edamame mixture over the rice.
- Garnish with toasted sesame seeds and serve.
