Ingredients
  

  • 2 cups baby spring mix (arugula, red chard, baby spinach) remove stems and chop large pieces
  • 1/4 cup cauliflower chopped fine
  • 1/4 cup canned beets rinsed; diced small
  • 2 tbsp walnuts chopped small
  • 2 tbsp pear diced
  • 2 tbsp apple hard and crispy; diced
  • 4 tbsp Orange Citrus Balsamic Dressing

Instructions
 

  • This is a layered salad. Assemble in the following order.
  • Place the baby spring mix into a medium bowl.
  • Layer on the cauliflower pieces.
  • Layer on the beets.
  • Layer on the chopped walnuts.
  • Layer on the pear pieces.
  • Layer on the apple pieces.
  • Sprinkle the dressing over the top and serve.
