Ingredients
  

  • 3/4 cup brown lentils dried
  • 1 tbsp olive oil extra virgin
  • 1/2 cup onion diced
  • 1/2 cup zucchini diced small
  • 2 tbsp tomato paste
  • 2 cloves garlic minced
  • 2 tsp Italian seasoning ***Click on Italian Seasoning Recipe link
  • 14 oz tomatoes canned, diced
  • 14 oz tomatoes canned, crushed
  • 4 cups vegetable broth ***Click on the Vegetable Broth recipe link
  • 8 oz lasagna noodles Tinkyada brand, broken into 2' pieces
  • 1 tsp salt
  • 1/2 tsp black pepper cracked
  • 1 large carrot peeled, diced into small pieces

Instructions
 

  • Bring a small saucepan of water to a boil. Cook the lentil's according to the directions on the package.
  • In a large saucepan, heat the oil over medium-high heat. Saute the onion, garlic, zucchini, and carrots for about 7 minutes. Add the tomato paste and Italian seasoning and cook for another 5 minutes.
  • Stir in the diced and crushed tomatoes along with the vegetable broth. Cover with a lid and bring to a boil; add the noodles and lower the heat to a simmer.
  • Simmer for the length of time as instructed on the package of noodles. Add the lentils, salt and pepper to taste. Remove from the heat and serve immediately. Enjoy!
