Lemon and Cilantro Couscous

  • 1 cup vegetable broth ***Click on our Homemade Vegetable Broth link
  • 1 cup water
  • 1 cup couscous
  • 1/3 cup lemon juice fresh squeezed, no added sugar or preservatives
  • 1/2 cup fresh cilantro chopped
  • 1/8 tsp sea salt to taste


  • In a large stock pot with a lid, add vegetable broth and water. Bring to a slow simmer, remove from the heat, stir well, cover, and let sit for 10 minutes or until soft. Fluff with a fork.
  • Add in lemon juice and cilantro. Season with sea salt to taste.
