Ingredients
  

  • 1 15oz can black beans drained and rinsed
  • 1/4 tsp cumin ground
  • 1/2 tsp chili powder
  • 1/4 cup water
  • 1/2 tbsp salt
  • 1 tbsp olive oil extra virgin
  • 1 15oz can corn no additives
  • 1 tbsp lime juice fresh squeezed, squeeze 1 whole lime juice divided
  • 2 cups brown rice cooked
  • 1 4oz can green chilis mild, no additives, drain juice
  • 2 cups romaine lettuce finely chopped
  • 2 cups red cabbage finely chopped
  • 1/2 cup red pepper diced
  • 1/2 cup green onions diced
  • 2 cups avocados sliced
  • 1/2 cup cherry tomatoes sliced in half

Instructions
 

  • Combine the water with the black beans, chili powder, cumin and a 1/4 tsp of salt in a saucepan. Cook the beans over medium heat for 4 minutes. Until hot.
  • In a medium skillet add the oil and heat on medium-high. Now add the corn, stir occasionally for about 5 minutes. Add 1 1/2 tsp of lime juice and the 1/4 tsp of salt. Set aside
  • Cook the brown rice according to the instructions on the package.
  • While brown rice is cooking prep the romaine lettuce, red pepper, red cabbage, avocados, green onions. Set aside
  • After brown rice has cooked, transfer to medium - large bowl add the can of green chilis, add 1 1/2 tsp of lime juice and stir.
  • Divide out the beans, corn, rice, romaine lettuce, cherry tomatoes.
  • Optional: You can top with Dave's pico for more flavor.
