Ingredients
  

  • 1 cup yellow onion diced small
  • 1 cup dill pickles diced small, NO ADDITIVES
  • 1/2 cup celery diced small
  • 1 cup plant-based mayo
  • 1/8 cup yellow mustard NO ADDITIVES
  • 2 tbsp dill weed dried
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 5 medium russet potatoes whole cooked, cooled and peeled, diced into med size

Instructions
 

  • Boil the whole potatoes, 20-30 minutes, then let cool and peel skins off, cut into medium size chunks.
  • Dice onion and pickles.
  • Place all ingrediets into large mixing bowl, mix well.
  • Serve

Notes
