Ingredients
- 2 med shallots diced
- 2 small fennel bulbs quartered lengthwise
- 2 tbsp water
- 2 tbsp fresh lemon juice
- 2 tbsp tarragon
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 4 medium potatoes sliced and cut in half
Instructions
- In a large skillet add 1 tsp water and chopped fennel and diced shallots place heat on medium and cook for 5 minutes.
- In another large skillet add 1 tsp water and add potatoes on medium heat cook for 5 minutes.
- Add potatoes from skillet to the skillet with fennel and add water, lemon juice salt, pepper, cook for 18 minutes or until potaoes are done.
- Sprinkle with tarragon and serve.
