This is great twist to potatoes with a licorice flavor.

Ingredients
  

  • 2 med shallots diced
  • 2 tsp olive oil
  • 2 small fennel bulbs quartered lengthwise
  • 2 tbsp water
  • 2 tbsp fresh lemon juice
  • 2 tbsp tarragon
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper
  • 4 medium potatoes sliced and cut in half

Instructions
 

  • In a large skillet add 1 tsp olive oil and chopped fennel and diced shallots place heat on medium and cook for 5 minutes.
  • In another large skillet add 1 tsp olive oil and add potatoes on medium heat cook for 5 minutes.
  • Add potatoes from skillet to the skillet with fennel and add water, lemon juice salt, pepper, cook for 18 minutes or until potaoes are done.
  • Sprinkle with tarragon and serve.
