"Ricotta" Manicotti

Ingredients
  

  • 12 large manicotti shells precooked, brown rice shells or chickpea
  • 1 blocks firm tofu crumbled
  • 2 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 2 tbsp olive oil extra virgin
  • 2 tbsp soy milk NO SODIUM BENZOATE
  • 1/4 cup nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1 tsp basil
  • 2 tbsp fresh parsley chopped
  • 3 cups Dave's Awesome Pizza Sauce Click on recipe link!
  • 1/3 cup plant-based cheese grated, VioLife

Instructions
 

  • Preheat the oven to 350 degrees. Prepare the manicotti shells according to the instructions on the package.
  • In a large bowl, combine the tofu crumbles, lemon juice, olive oil, soy milk, nutritional yeast, and spices. Mash until a smooth consistency.
  • In a casserole dish with a lid, pour half of the Dave's awesome pizza sauce into the bottom and spread evenly.
  • Stuff each manicotti shell with the tofu mixture and place into the casserole dish. Spread the remaining marinara sauce over the top of the shells, covering the edges well. Sprinkle the "cheese" over the top of the pizza sauce.
  • Cover and bake for 30 minutes.
