Roasted Garlic Mashed Potatoes

  • 6 Yukon Gold potatoes diced
  • water for boiling
  • 1/4 cup Earth Balance Butter
  • 1/2 cup soy milk NO SODIUM BENZOATE
  • 4 tbsp roasted garlic mashed
  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper to taste


  • Place potatoes in a large stock pot and cover with water. Cook for approximately 25 minutes or until potatoes are soft. Drain and place into large bowl.
  • Add Earth Balance butter and soy milk, and roasted garlic. Mix well with a mixer until a smooth consistency. Add salt and pepper to taste.
