Ingredients
  

  • 2 tbsp olive oil extra virgin
  • 5 cloves garlic minced
  • 1 cup red onion diced
  • 1 tsp saffron threads loosely packed
  • 1/2 tsp thyme dried
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1 1/2 cup brown rice
  • 3 1/2 cups vegetable broth ***Click on our Homemade Vegetable Broth link
  • 3/4 cup parsley chopped
  • 1/2 cup peas fresh or frozen
  • 1/2 cup carrots peeled, diced

Instructions
 

  • Heat oil in a large saucepan over medium heat and saute the onion and garlic for about 5 minutes. Cook, stirring often until the onion starts to caramelize.
  • Add in the saffron, thyme, smoked paprika and salt. Pour in the broth and increase heat to high. Stir thoroughly to make sure saffron threads are evenly distributed.
  • Add the rice; cover with a lid, then reduce heat to medium-low, and cook for 25 minutes; then add the carrots and peas.
  • Continue cooking until broth is absorbed and rice is tender; about 25 to 30 minutes. Remove from the heat and stir in the parsley. Enjoy!
