Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1/4 cup red onion diced
  • 1 tbsp ginger fresh, minced
  • 2 cloves garlic minced
  • 2 tbsp Thai red curry paste plant-based, no additives, NO SODIUM BENZOATE
  • 1/2 cup warm water
  • 1/2 cup peanut butter smooth, natural
  • 3 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 3 tbsp lime juice fresh squeezed
  • 1 tbsp agave nectar

Instructions
 

  • Heat the olive oil in a small saucepan over medium to high heat. Add the onion and saute for about 6 minutes, then add the ginger and garlic. Continue to saute the mixture for another 2 to 3 minutes until tender and fragrant.
  • Mix in the curry paste into the saucepan and saute until the color darkens. Add in all the other ingredients; continuously stirring until a pourable consistency is reached. Remove from the heat and allow to cool.

Notes

ALERT!!!! Because this recipe has higher levels of fat this recipe should be just for those people on the 2000 calorie plan. Keeps in the fridge for up to 3 days. Can be used as a sauce or a dip.
