Ingredients
  

  • 3 cups Tinkyada spirals prepared according to package instructions
  • 2 large tomatoes diced
  • 1/2 cup banana peppers thinly sliced
  • 1/2 cup red onion diced
  • 1/2 cup black olives sliced
  • 2 tbsp olive oil extra virgin
  • 1 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 2 tsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 1/2 tsp dried basil
  • 1/2 tsp oregano
  • 1/8 tsp salt to taste
  • 1/8 tsp black pepper to taste
  • 2 avocados sliced

Instructions
 

  • In a large bowl, combine the pasta, tomatoes, peppers, onion, and olives.
  • In a separate small bowl, add the remaining ingredients except the avocados and whisk well.
  • Drizzle the liquid mixture over the pasta mixture and gently toss.
  • Chill in the refrigerator or at least 1 hour. Gently toss before serving.
