  • 3 tbsp mayonnaise plant-based
  • 1 tbsp yellow mustard
  • 1 tsp agave nectar
  • 1/2 tsp white vinegar
  • 15 oz chickpeas canned, drained, rinsed
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper fresh cracked
  • 8 slices bread no bleached flour
  • 3 cups leafy greens


  • In a medium sized bowl, combine the mayonnaise, mustard, white vinegar, and agave. Taste and adjust to your preference if you want it more sweet or tangy.
  • Put the chickpeas in a bowl and mash with a fork. Add the dressing, celery, red onion, salt and pepper to taste.
  • Toast the bread for the sandwich to your preferences. Fill each sandwich with a small handful of leafy greens and a couple of scoops of chickpea salad. Enjoy!


Pairs well with sandwich pickles or a nice fruit salad.
