Ingredients
  

  • 2 tbsp olive oil extra virgin
  • 1/2 tsp sesame oil
  • 1 cup onion chopped
  • 1 cup broccolini halved
  • 2 tbsp water
  • 3 cloves garlic minced
  • 1 whole red chili finely sliced, seeded
  • 1 tbsp ginger fresh, peeled, grated
  • 1 cup red bell pepper seeded, thinly sliced
  • 1 cup mushrooms button, sliced
  • 1 cup sugar snap peas
  • 1 cup baby sweet corn sliced lengthwise
  • 1 tbsp soy sauce low sodium, NO SODIUM BENZOATE

Instructions
 

  • Heat the olive oil and sesame oil in a large saucepan over medium-high heat then saut√© the onions for about 5 minutes.
  • Add in the broccolini along with 2 tbsp of water, cover the pan and increase the heat to high to steam for about 5 minutes.
  • Mix in the garlic, chili pepper, ginger, bell pepper, mushrooms, snap peas, and sweetcorn. Cook until all veggies are tender then drizzle in soy sauce. Enjoy!

Notes

Serve by itself or over your favorite brown rice stir fry noodles.
