Ingredients
- 1 cup Millet
- 2 3/4 Water
- 1 15oz Can Great Northern Beans cooked
- 2 cloves Garlic
- 1 cup Cherry Tomatoes quartered
- 2 tbsp Fresh Dillweed minced
- 2 tbsp Fresh Parsley minced
- 2 tbsp Fresh Lemon Juice
- 1/4 cup Nutritional Yeast
- 1/4 cup Dry Breadcrumbs unseasoned
- 1 medium Red Bell Pepper diced
- 1 medium Yellow Onion
- 1 tsp Grapeseed Oil
- 3 cups Swiss Chard stemmed
- 1/2 tsp Sea Salt
Instructions
- Bring the 2 3/4 cups of water to a boil in a large saucepan on high heat
- Add the millet and sea salt and return to boil.
- Reduce heat to low, cover and simmer for 40 minutes set aside
- Preheat oven to 350°
- Lightly oil 2-quart casserole dish and set aside
- In a large skillet heat the grapeseed oil on medium heat and cover
- Add the bell pepper and onion and cook for 7 minutes
- Add swiss chard and garlic and sea salt and black pepper to taste cover and cook for 5 minutes
- Stir in the swiss chard mixture into the millet and add the beans, dillweed, tomatoes, nutritional yeast, lemon juice, and parsley
- Transfer the mixture into the casserole dish
- Sprinkle breadcrumbs on top evenly
- Bake for 25 minutes and serve
