Ingredients
  

  • 1 1/4 cups yellow split peas rinsed and drained
  • warm water for soaking
  • 3 1/4 cups water
  • 1 tsp sea salt
  • 1/4 cup cilantro chopped
  • 3 cups baby spinach
  • 2 large tomatoes diced
  • 1/4 cup vegetable broth
  • 2 cloves garlic minced
  • 1 tbsp ginger fresh; chopped
  • 1 4oz can of mild green chiles diced, no preservatives
  • 2 tsp lemon juice fresh squeezed; no preservatives
  • 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric

Instructions
 

  • Soak yellow peas for a medium-large bowl in warm water for 45 minutes.
  • Drain and move to a large stock pot or sauce pan
  • Add the water to the large saucepan and bring to boil
  • Add salt and reduce heat to medium cook for 40 minutes until peas are tender
  • Add cilantro, spinach, tomatoes stir on very low heat
  • In a small skillet, pour enough of the broth to thinly coat the bottom of the pan. Saute the garlic, ginger, and chiles over medium high heat for about 1 minute.
  • Remove from the heat and add lemon juice, coriander, cumin, turmeric and stir well
  • Add the mixture to the dal and stir, then serve
