Sweet Potato Tacos

  • 2 cups cabbage shredded
  • 1/4 cup red onion thinly sliced
  • 1/4 cup apple cider vinegar
  • 1/3 cup water
  • 1/2 tsp salt

Sweet Potato

  • 1 1/2 cup sweet potato peeled,cubed
  • 3/4 tsp salt
  • 1 1/2 tbsp taco seasoning
  • 1 tbsp olive oil extra virgin

Lime "Mayo"

  • 1/2 cup plant-based mayo
  • 1 tbsp lime juice fresh squeezed
  • 1/8 tsp salt
  • 1 clove garlic minced

To Serve

  • 8 corn tortillas no bleached flour
  • 1/4 cup avocado sliced


  • To prepare the slaw, place the cabbage and onion in a lidded container along with the apple cider, water and salt. If cabbage is not completely covered with liquid add more water. Shake well and set aside. Occasionally shake while working with other ingredients to make sure salt is dissolved.
  • Peel and cube the sweet potato. Coat in oil along with taco seasoning, salt and place in microwave safe dish. Cook on high for 2 minute intervals until pieces can be pierced easily with a fork. Set aside to cool.
  • In a bowl, combine all the "mayo" ingredients and stir well.
  • Serve immediately on tortillas with the slaw, potatoes, mayo and avocado.


Serves well with fresh cilantro, or salsa.
