Simple Tofu Lasagna

  • 1 block firm tofu
  • 12 oz silken tofu
  • 1/4 cup nutritional yeast
  • 1 tbsp lemon juice fresh squeezed, no added sugar or preservatives
  • 1 tbsp soy sauce low sodium, NO SODIUM BENZOATE
  • 1 tsp garlic powder
  • 2 tsp basil fresh or dried
  • 3 tbsp fresh parsley chopped
  • 1/4 tsp salt
  • 2 tbsp Earth Balance Butter
  • 4 cups spaghetti sauce low sodium
  • 16 oz Tinkyada lasagna noodles cooked


  • Preheat the oven to 350 degrees.
  • In a large bowl, mash together all the ingredients except the butter, spaghetti sauce and noodles. Combine until crumbly like ricotta cheese.
  • Using the butter, lightly coat the lasagna pan. Assemble the lasagna by spreading 1/3 of the spaghetti sauce on the bottom of the pan, then a layer of noodles. Then spread 1/2 of the tofu mixture on top of the noodles. Follow with another layer of 1/3 of the sauce, then another layer of noodles and the rest of the tofu mixture, then a layer of sauce and the final layer of noodles and top everything off with the final layer of sauce.
  • Cover with foil and bake for 25 minutes.
